For years the honest answer to "where should we go tonight?" in Prior Lake ended with a shrug toward Charlie's or a drive up 13. That answer has changed. As of the 2026 summer season, the downtown circuit that runs from the Farmers Market on Main Avenue SE, down the south end of Main to the Prior Lake Days grounds, and over to Lakefront Park on Kop Parkway now includes a full-service room on Colorado Street. If you already live here, August is the month where that consolidation actually pays off. You can plan a weekend without leaving a one-mile radius, and for the first time in a while, none of the stops feel like a compromise.
Here is how the calendar and the map fit together this month.
The new room on Colorado Street
The most concrete change to the downtown food picture is Chula's Mexican-Latin Food & Spirits at 4636 Colorado St SE. The site used to be the T-Shirts and More building, which came down in early June 2025 to make room for the new construction. Owner Manny Perez has been in food service for roughly 35 years, runs the local Subway and one at MSP, and was named the SBA's Minnesota Minority Small Business of the Year in 2024. The restaurant is now open with indoor, outdoor, and open-air seating, hand-crafted cocktails, and a scratch kitchen leaning Mexican and Latin.
Two dates on their calendar are worth putting on your phone before August fills up:
- Agave Spirits Education, Monday, July 20, 6:00–7:00 PM
- Rev It For A Reason, Saturday, August 1, 10:00 AM–10:00 PM
The "Rev It For A Reason" date is the one to plan around if you want to see the patio at full volume before Prior Lake Days pulls the whole town six blocks north the following weekend.
Saturday morning still belongs to the market
The Prior Lake Farmers Market has been running on Saturday mornings for more than 20 years, and in 2026 it opened May 2 and runs through early October. The setup is unfussy on purpose:
- When: Saturdays, 8:00 AM to noon
- Where: Main Avenue SE, downtown
- Payment: Some vendors take cards or Venmo, but many prefer cash; small bills move the line faster
- What to bring: A tote, because the market does not provide bags
- What to skip breakfast for: The food trucks and coffee are part of the point
August is when the vendor tables actually start to look like the marketing photos. Sweet corn is in, tomatoes are ripe, and the produce mix broadens toward late-season squash by month's end. If you have out-of-town guests, this is the twenty-minute stop that shows them what living here is like without any performance involved.
Friday nights at Lakefront Park
The city's free summer concert series at Lakefront Park, 5000 Kop Parkway SE, is a fixed weekly anchor and a good example of why living close to downtown pays off in the summer. Bring a chair and a cooler, skip the glass, and plan on food trucks for dinner. Two dates remain in the 2026 lineup:

The August 28 slot is the two-hour show and the last one on the calendar. If inclement weather is in play, the city posts updates at priorlakemn.gov/weather rather than making you guess.
Lakefront Park is also the venue that hosted Lakefront Music Fest earlier this month, the Prior Lake Rotary fundraiser that brought Billy Idol and Jefferson Starship on Friday, July 10 and Keith Urban, Jackson Dean, and Karley Scott Collins on Saturday, July 11. The point of mentioning it is not the lineup, which is already gone, but the practical fact that the park has now proven twice this summer that a large crowd can move through it without paralyzing downtown traffic. Parking behind St. Michaels and at City Hall works. The Lakefront Park lot itself fills first.
The one weekend everything converges: Prior Lake Days
If you pick one weekend to be in town in August, pick this one.
Prior Lake Days runs Friday, August 7 and Saturday, August 8, 2026, at the south end of Main Street. It is a Chamber-run event with two very different halves:
Friday evening is the adults-only tasting event. It is 21+, ID required at check-in. Tickets are $25 presale from June 15 through August 6, and $35 day-of or at the door. If you are still on the fence on August 6, buy the presale ticket that night; the ten-dollar delta is the least interesting money you will spend all summer.
Saturday is the full-day community event. Live music, food, local vendors, a dedicated Kid's Zone with inflatables, a Cornhole Tournament, and the Cookie Eating Contest that people bring their kids to specifically so they can tell them no, and then say yes. Attendance is heavy across both days, so if you live within walking distance of Main, walk.
Two logistical notes that make this weekend easier if you have lived here long enough to know that they matter. First, the Farmers Market still runs Saturday morning during Prior Lake Days. You can hit the market at 8:00, be home by 10:00, and be back on Main by early afternoon. Second, if you host guests that weekend, the tasting event Friday night doubles as the tour. It is easier to explain what Prior Lake is by walking someone through a Chamber tasting than by driving them around pointing at things.
Weeknights: the Jays, the ice cream stand, and the lake
The two easiest weeknight moves in August are both waterfront in different senses.
The Prior Lake Jays play amateur town ball at Veterans Field inside Memorial Park, 5181 160th St SE. Home games are the closest thing this town has to a standing weeknight social event. Bring a folding chair, bring the kids, and you will run into people you have not seen since the last home game.
Charlie's on Prior is the other one. It is a full-service restaurant and marina, open year round, with an upper dining room and patio, a waterfront bar called The Landing, and a seasonal hard-scoop ice cream stand that is the correct after-dinner move if you are within driving distance and it is still light out. The lower patio is leashed-dog-friendly with water bowls available, which is worth knowing if the alternative is leaving the dog at home on a 78-degree evening. Boat slips are available for restaurant guests and seasonal rental, which is also the fastest reminder that this is not a suburb pretending to be lakeside.
The reason both of these show up on this list rather than three restaurants on 13 is simple. In August, the point of living in Prior Lake is to be outside, near water or turf, without a plan more elaborate than "meet you there at 6:30."
A sample Saturday, if you want the compressed version
Here is how a resident's August Saturday actually reads when you stack the pieces together.
- 8:15 AM: Farmers Market on Main Avenue SE. Bring cash and a tote. Coffee from the truck, produce for the week, out by 9:30.
- 10:00 AM–early afternoon: Home, yard, lake, whatever your default is.
- 4:00 PM: Walk or drive to Lakefront Park if it is a concert Friday. Otherwise, head to Charlie's before the 5:30 wait sets in.
- 6:30 PM: Dinner. If you want the newer room, book Chula's on Colorado Street a few days ahead. If you want the water, Charlie's upper patio.
- 8:30 PM: Ice cream stand at Charlie's if the light is still holding. Home before dark if you have kids, later if you do not.
On the Prior Lake Days weekend, swap the afternoon block for the south end of Main. On concert Fridays, the Lakefront Park block replaces one of the meals rather than layering on top of it. That is the whole trick. The events are close enough together that you pick two, not four.
Why this matters if you have lived here a while
The quiet story of Prior Lake's 2026 summer is not one new restaurant, one new concert series, or one new festival. It is that the downtown-plus-Lakefront-Park circuit has finally filled in enough that a full weekend does not require a drive to Burnsville or Shakopee to feel complete. Chula's added a room the town has been asking for through community surveys for years. The Concerts in the Park series stayed free. The Farmers Market is still on Main. Prior Lake Days is still Prior Lake Days. And Charlie's is still where you end up when a plan falls through.
If you spend August paying attention to the calendar rather than the drive time, you will notice how much shorter the drive time actually got.
